1 lb. Pasta Boiled (Rotini, Penne, Shells, work best)
1 c. Cherry Tomatoes - or diced tomatoes
1/2 c. Chopped Fresh Parsely
1. c. Fresh Spinach Leaves
1/2 c. Kalamata Olives
4 oz. Crumbled Feta Cheese
1/2 tsp. Italian spice blend (optional)
1 Lemon Juiced
1/2 tblsp Dijon Mustard
1/2 C. Olive Oil
Salt & Pepper
Boil pasta and let it cool. In large bowl, mix Pasta, Cherry Tomatoes, Chopped Parsely, Spinach, Olives, Feta Cheese crumbles, and Italian spice blend. In separate bowl, juice Lemon, and add Dijon Mustard, and Olive Oil and whisk until well mixed. Immediately add to pasta and stir.
Optional: Add boiled and cleaned shrimp
