Strawberry Cream Crepe Filling Recipe

• Strawberry Cream

• 2 cups sliced strawberries
• 1⁄4cup  sugar
• 1(8 ounce) package cream cheese, softened
• 1⁄4cup  powdered sugar

You can use frozen strawberries too but make sure they are thawed! 

Vanilla Cream Sauce Crepe Filler Recipe

1. vanilla cream sauce for crepe filling

2. 8 ounces  cream cheese, room temperature (soft)
3. 1⁄2cup  powdered sugar (or to taste)
4. 4 tablespoons  butter, melted
5. 1 teaspoon  vanilla extract
6. 1⁄4cup  sour cream
7. 1⁄2cup  heavy cream (a little thinner than pudding, add until it is thin enough to just drip)
9. 
   
10. VANILLA CREAM SAUCE DIRECTIONS.
11. Mix all ingredients for Vanilla Cream Sauce together.
12. Spoon into center of crepe and fold over seam side down.
13. Top with fresh fruit of choice. I like to also drizzle a lil bit of the vanilla cream sauce on top to keep blueberries from rolling off the crepes!

Caesar Pasta Salad (02:28)
Hail, Sandra, for combining two favorites into one creamy, filling dish!
Ingredients
1/2 (16-ounce box) rotini pasta
1/2 cup creamy Caesar salad dressing
1 lemon, zested and juice
3 tablespoons chopped parsley leaves
1/4 cup grated Parmesan
Freshly ground black pepper
1 cup garlic croutons
ADD CHECKED ITEMS TO GROCERY LIST
Directions
Watch how to make this recipe.
Bring a large pot of salted water to a boil over medium heat. Add the pasta and stir gently. Boil uncovered, stirring occasionally until al dente, about 8 minutes. Remove from the heat. Drain well and rinse with cold water.

In a large bowl, combine the Caesar dressing, lemon zest, lemon juice, parsley, Parmesan and pepper. Add the croutons, and cooked cooled pasta. Mix until all of the pasta is coated with the dressing. Transfer to a serving bowl and serve. This pasta salad can be made a day ahead, just reserve the croutons and add them 15 minutes before you are ready to serve.

Quick and Almost-Professional Buttercream Icing

"After failing to find the perfect recipe for buttercream icing, I found one that worked for me and then added my own two cents."

Ingredients

• 1/2 cup unsalted butter, softened
• 1 1/2 teaspoons vanilla extract
• 2 cups confectioners' sugar, sifted

 

• 2 tablespoons milk
• 3 drops food coloring, or as needed (optional)

Directions

1. Cream room temperature butter with a hand mixer, the paddle attachment of a stand mixer, or a wooden spoon until smooth and fluffy. Gradually beat in confectioners' sugar until fully incorporated. Beat in vanilla extract.
2. Pour in milk and beat for an additional 3-4 minutes. Add food coloring, if using, and beat for thirty seconds until smooth or until desired color is reached.

Cake Decorating

I made the Chocolate Cake as practice for Cake Decorating for my Birthday Cake in September.

I had to practice making the Rosettes with my sister Sara.
It was good and delicious.
I am having it for my dessert.
I am sharing a piece to Rob, Dad and Nina.
For my Birthday I am going to add another layer of raspberry preserves and Raspberries on top for the cake decorations.
I decorated my chocolate cake with Rosettes and berries on top for my Birthday.

• Beat egg yolks in small bowl with electric mixer on high speed about 3 minutes or until thick and lemon colored. Gradually beat in sugar.
• Heat 1 cup whipping cream in 2-quart saucepan over medium heat until hot. Gradually stir at least half of the hot whipping cream into egg yolk mixture; stir back into hot cream in saucepan. Cook over low heat about 5 minutes, stirring constantly, until mixture thickens (do not boil). Stir in chocolate chips until melted. Cover and refrigerate about 2 hours, stirring occasionally, just until chilled.
• Beat 1 1/2 cups whipping cream in chilled medium bowl with electric mixer on high speed until stiff. Fold chocolate mixture into whipped cream. Pipe or spoon mixture into serving bowls. Immediately refrigerate any remaining dessert after serving.

About This Recipe

"Are you craving that great Mexican rice from your favorite taco stand? Here it is. This is just like a good Mexican restaurant rice. Many recipes taste good... but the texture just isn't right. You know how it is... you have prepared scores of Mexican rice recipes but always have been disappointed. It may be delicious but kinda "gloopy and wet." Try this. Everything is pureed and cooked in. There are no chunks of anything... just dry fluffy rice with all the seasonings and just the tiniest hint of a tomato flavor. I will throw away all of my Mexican rice recipes- this is the one I have been looking for for years! I don't own a rice cooker but some people have had disappointing results using one. You will also need to adjust your cooking time if you want to use brown rice. I recommend following the cooking instructions as directed. Proceed at your own peril if you stray. Enjoy."

Ingredients

• 12 ounces tomatoes, very ripe and cored
• 1 medium white onion
• 3 medium jalapenos
• 2 cups long grain white rice
• 1/3 cup canola oil
• 4 minced garlic cloves
• 2 cups chicken broth
• 1 tablespoon tomato paste ( may omit if using canned tomatoes)
• 1 1/2 teaspoons salt
• 1/2 cup fresh cilantro, minced
• 1 lime

Directions

1. Adjust rack to middle position and preheat oven to 350.
2. Process tomato and onion in processor or blender until pureed and thoroughly smooth. Transfer mixture to measuring cup and reserve exactly 2 cups. Discard excess.
3. Remove ribs and seeds from 2 jalapenos and discard. Mince flesh and set aside. Mince remaining jalapeno. Set aside.
4. Place rice in a fine mesh strainer and rinse under cold running water until water runs clear- about 1 1/2 minutes.Shake rice vigorously to remove excess water.This step removes the starch from the rice so it will not stick. IF YOU OMIT THIS STEP YOUR RICE WILL NOT BE DRY AND FLUFFY.

5. Heat oil in heavy bottomed ovensafe 12 inch straight sided sautee pan or Dutch oven with tight fitting lid over low-medium heat about 2 minutes. (The recipe is very specific about this but I used a 10 inch dutch oven and it worked out fine.) Drop a few rice grains in and if they sizzle then it is ready. Add rice and fry stirring until rice is light golden and translucent, about 6-8 minutes. Be careful that the oil doesn't get too hot too fast or the oil will splatter.
6. Reduce heat to medium, add garlic and 2 minced jalapenos and cook , stirring constantly until fragrant, about 1 1/2 minutes.
7. Stir in broth, pureed mixture,tomato paste, and salt. Increase heat to medium high, and bring to a boil.
8. Cover pan and transfer pan to oven to bake until liquid is absorbed and rice is tender, 30-35 minutes.Stir well after 15 minutes.
9. Stir in cilantro, minced jalapeno to taste, and pass lime wedges separately.
10. Edited to add 6-15-05: If you can't get good fresh tomatoes you are better off using canned tomatoes. Don't use those awful hard and underipe tomatoes that are at most supermarket chains. Just be sure that the processed tomatoes and the one onion equals 2 cups. One the other hand- if you find that after processing your tomatoes and onions that you have less than 2 cups- simply add enough bottled salsa to make up the difference.
11. Edited 8-21-06: Do not skip any of the steps. It may seem stupid- but rinsing the rice to remove the starch is very important if you want fluffy rice. It will only take two minutes of your time but it makes the difference.
12. Edited 8-15-08: Leftovers are just as delicious the next day so this is a perfect dish to make ahead time for potlucks. This rice also freezes well. For Freezing Ahead: Cool, portion and freeze in a ziploc bag. To reheat from frozen: Place in a pyrex dish and warm in the microwave, stirring every 2-3 minutes until heated through.
