Popovers
Makes 6
I love these plain and fresh out of the oven for breakfast, but are good with jam too..
Sometimes I also serve them with dinner, especially if there is a roast with gravy.
1-1/2 cups flour
1-1/2 cups milk
3 eggs
3 tablespoons butter
1/8 teaspoon salt
Tiny dash of nutmeg
Bring eggs, milk and butter to room temperature. Preheat oven 400 degrees. Grease large 6
cup muffin tin generously inside cup area and also over the whole top surface of the pan. The
popovers will popover the top of the muffin cup so this is why the top needs to be buttered.
Whisk together in bowl eggs, milk, flour, salt, and extremely small barely there dash of nutmeg.
Pour batter evenly into the 6 cups which should fill cups approximately two-thirds full. Bake in
center of oven for exactly 32 minutes. Do not open the oven while baking or the popovers will
fall. After 32 minutes remove the popovers from the oven and gently lift them out of the cups
and serve.
