Celeste's Potato Cakes Recipe

Celeste's Potato Cakes
Serves 6

The is my grandmother's recipe. I love these served with smoked salmon

3 large baking potatoes
1/4 cup grated white onion
1 egg
3 tablespoon flour
1/2 cup vegetable oil

Peel potatoes and grate them in large bowl. Grate onion into same bowl and add egg, flour, and
and season with salt and pepper to taste. Heat oil in skillet on high heat until it shimmers.
Caution here, when you add the potato mixture to the pan, the oil with crackle and spatter. I
stand as far back as I can from the pan while fry cooking. Maintaining a high heat in the pan you
are frying with will help prevent the food from absorbing too much oil. This applies to 
whatever you are frying.
Very carefully add scoops of potato mixture into pan but do not crowd the pan. If using a
large pan, cook no more than 4 patties at one time. When the potatoes and golden brown on
the bottom, use the spatula to lift and unstick the pattie from the pan, then use the tongs to flip
it over to the other side to cook. I found this is the safest way to turn these patties over with
minimal splatter of oil and the dangers of fire. When patty is finished cooking place on plate
that is covered with paper towel to absorb oil and then place patty in heated oven on baking
sheet to keep warm and finish cooking inside while other patties are still cooking.

Coconut Cream Pie Recipe

Coconut Cream Pie

I use a box crust mix. I bake it and cool it while I make the coconut mixture....

2/3 cup sugar
3 tablespoon cornstarch
1/2 teaspoon salt
3 cups milk
3 egg yolks (slightly beaten)
3/4 cup moist shredded coconut
1 tablespoon butter
1 1/2 teaspoon vanilla

1 1/2 teaspoon vanilla

Mix sugar, cornstarch salt in sauce pan and gradually stir in milk.

Cook over medium heat stirring constantly until mixture thickens and boils. Boil one minute. Remove from heat.

Gradually stir in half of the egg yolks into hot mixture. Then blend the other half into mixture. Boil one minute more, stirring constantly. Remove from heat.

Blend in coconut, butter and vanilla. Pour into baked pie crust. Refrigerate

German Chocolate Turtle Bars Recipe

GERMAN CHOCOLATE TURTLE BARS 
1 pkg. German chocolate cake mix
3/4 c. melted butter
1 sm. can evaporated milk
1 (14 oz.) pkg. caramels (50 candies)
1 c. chopped nuts
1 (6 oz.) pkg. chocolate chips

Melt caramels with 1/3 cup (1/2 can) evaporated milk. Mix together cake mix, butter, 1/3 cup evaporated milk and nuts. Press 1/2 mixture into 9 x 13 inch pan. Bake at 350 degrees for 6 minutes. Sprinkle chocolate chips over crust. Pour on caramel mixture. Dab remaining dough over caramel layer. Bake at 350 degrees for 15 to 20 minutes.
