Cheesy Chicken Tortilla Casserole
Serves 4
I serve the casserole with fresh Pico de Gallo and sour cream on the side.
1-1/2 Chopped cooked chicken
1 16 oz bag corn chips crushed
1/2 c chopped fresh cilantro
1/2 c chopped green onion
1 seeded Jalapeno finely diced (optional)
8 oz package of shredded cheddar and mozzarella cheese
2 10 oz can cream of chicken soup
2 16 of cans of diced tomatoes in juice
Preheat oven 350 degrees. Place crushed corn chips in large bowl and add canned tomatoes and cream
soup and mix thoroughly. Stir in chopped cilantro, green onion, and jalapeno. Spread mixed into
with the cheese. Cover casserole dish with aluminum foil and bake for approximately 40 mins. Serve
with fresh Pico de Gallo and sour cream.
